Ingredients (2-3 servings)
200g spaghetti or fettuccine
1 bunch spinach (or 150g baby spinach leaves)
200g diced bacon
1 small brown onion
1 tablespoon olive oil
300ml thickening cream
100ml milk
1/4 cup finely grated parmesan cheese
1-2 piece cheddar cheese
¼ lemon
Salt to taste
Method
- Cook pasta in a large saucepan of salted boiling water, following packet directions, until just tender.
- Clean and finely chop spinach leaves.
- Heat the oil in a non stick frying pan over medium-high heat until hot. Add bacon and onion, stirring often, for 4 to 5 minutes or until golden and crisp.
- Add cream and milk slowly, cook and stirring constantly to prevent lumps forming for 5 minutes or until sauce boils and thickens.
- Add cheese and salt and pepper to taste. Stirring and cook for 2 minutes or until cheese melts.
- Add chopped spinach leaves and cook for another 2-3 minutes.
- Season with salt and crack pepper.
- Add cooked spaghetti and toss.
- Served top with parmesan cheese and parsley flakes, squeeze some lemon juice and add a drizzle of olive oil.
